1 cup shortening
1 cup granulated sugar
1 cup packed brown sugar
2 eggs
1/4 cup sour milk OR buttermilk
1 tsp vanilla
3 1/2 cups all-purpose flour
1 tsp baking powder
1 tsp baking soda
1 tsp salt
1 tsp ground nutmeg
Blackberry, raspberry, or strawberry jam.
Preheat oven to 350 Fahrenheit.
In a large bowl, cream the shortening and sugars. Add eggs, milk, vanilla. Mix until smooth. Stir together flour, baking powder, baking soda, salt, nutmeg. Stir into creamed mixture. Cover and chill 30 minutes.
On a floured surface, roll dough to 1/8 inch thick. Use a cookie cutter [or a small cup or glass] to cut into rounds 1-and-1/2 inch in diameter. Half the rounds will be tops, the other half bottoms. Place 1 tsp jam on each bottom. Use the remaining rounds to top. Lightly seal edges with a fork [if it sticks, dip it in cold water]. With a sharp knife, cut an X in the tops to let steam escape.
Place on cookie sheet [I used parchment paper; if you don't, you probably should grease the cookie sheet.] [Don't put them too close together--they'll double in size.] Bake until golden, 10-15 minutes.
Makes 5 dozen.
